    摘要: 飲食是生活的組成因子,文學作品裡與飲食相關的描述,能反映一個時代的文化及集體意識形態,故研究飲食文學,可作為吾人研究一個時期文化的線索。本篇論文以當代臺灣文學作為研究場域,將重點著眼於後現代與後殖民情境下的飲食文化觀察,探討自戰後迄今的飲食文學所展現的社會面向與文化意識,並論證作家在行文策略上所呈顯的後現代與後殖民書寫特色。研究結果顯示,由於臺灣是個多元族群融合的社會,複雜的歷史背景形成臺灣多元的文化內涵,也開拓了臺灣的飲食景觀。來自不同族群的作家將豐富的飲食經驗化為書寫題材,能呈現其個人思維與集體創作意識,並可作為文化研究的珍貴資料。從戰後的飲食書寫主題,可洞見臺灣社會轉型軌跡及飲食文化內涵的承繼與開創,作家的書寫策略也反映了受社會環境及西方文藝理論的影響,在文學體製、風格上呈現多元發展的趨勢。八○年代之後,「後現代」與「後殖民」成為文學與文化研究者爭論的焦點,作家在書寫策略上,無可避免受到這兩種文藝理論的影響而建構出具有後現代與後殖民的文學風格。解嚴後文學的主題意識為多元身分認同和去中心,後殖民的意識已融入文學作品裡,形成作家的書寫特質,而文本內容亦反映出後殖民的飲食風貌;後現代主義亦在此情境下進入台灣文壇,經由本地作家、學者詮釋後產生了變化,從研究文本中可反映作家的後現代書寫特質已有本土化的趨勢,成為臺灣後現代文學的特殊模式。以「飲食」作為書寫題材的文學作品,亦可反映出社會在這兩股西潮帶動下的飲食特質。 Diet is part of our life. The narrations in literature pieces related to diet reflects the culture and collective thoughts of an era. The research on diet literature can be used to investigate the culture of a time period. The research materials used in this thesis are the Taiwanese literature of a chosen time period and will focus on observation of the diet culture of post-modern and post-colonial era. The effects of diet literature on societal motivation and culture awareness will be probed, and how the literary strategies employed by the author will display the characteristics of the post-modern and post-colonial writings. Research results show that the complicated historical background and race and cultural diversity of the Taiwanese society have broaden the views of Taiwanese diet. Authors coming from different cultural groups use bountiful food and diet experiences as writing materials, expressing personal views and collective creativity which can be used as precious information for cultural research. From the themes of post-war books on food and diet, it can be seen how Taiwan has evolved and also the heritage and founding of Taiwanese diet culture. The literary strategies employed by the authors within their writing and style, also reflect the influences of the social environment and western theories. This shows a diversified development trend. After the 1980’s, the [post-modern era] and [post-colonial era] have become the focus of argument for litterateurs and cultural researchers. The influences created by the argument of the two sides cannot be avoided when writing, thus emerged the post-modern and post-colonial literary styles. After the ending of martial law, literary themes are recognized as diversified, not centralized, and the post-colonial awareness has infiltrated into literary works forming the writing styles of the authors. Their literary contents reflect the eating habits of post-colonial era. Post-modern ideologies were introduced into Taiwanese literature under these circumstances through translations by local writers. From researching the literary works, the trend of post-modern characteristics of the writers is already becoming more localized. This forms the special format of the post-modern Taiwanese literature. By using [Diet] as themes materials for literary works, it reflects the dieting characteristics under the influence of these two western trends.
