本論文以焦桐與飲食文學、飲食文化之間的淵源為論述起點,經由探討焦桐的飲食文學作品,探究他的飲食文學與飲食文化的觀點,進而架構焦桐的飲食觀,並析論身為《飲食》雜誌創辦人的焦桐,如何將他的飲食文學與飲食文化貫穿於雜誌之中。《飲食》雜誌是華人世界第一本介紹精緻飲食文化的雜誌,在改版之後更是首創華人世界美食的專業評鑑雜誌,經由耙疏《飲食》雜誌,觀察焦桐飲食觀在《飲食》雜誌中呈現的狀況。焦桐身兼文化人、出版人與詩人的不同面向,通過他三位一體的特殊身分,詮釋焦桐對於飲食文化的各項表現。 本論文以焦桐的飲食文學作品與《飲食》雜誌文本作為研究場域,將重點著眼於焦桐創辦《飲食》雜誌時的創刊理念以及雜誌內容風格與改版前後的差異,經由「文化」的角度出發,探討臺灣飲食乃至於華人飲食所展現的社會面向與文化意識。臺灣是多元民族融合的社會,複雜的歷史背景形成臺灣飲食多元的文化內涵,焦桐在探討混血飲食的同時,也同樣關照社會族群與政治的議題。經由連結焦桐的飲食觀與《飲食》雜誌中「文學」、「文化」與「流行趨勢」等不同面向,為焦桐與《飲食》雜誌在華人飲食文化座標中尋求定位。 The thesis originates from Jiao Tong’s diet literature and discusses the relations between his literature and diet culture. The framework of the thesis takes Jiao Tong’s view of diet and analyzes the journal “Diet”, which is the first magazine introducing delicate diet culture, professionally evaluating diet in Chinese world at the first time after it is revised. Jiao Tong is a culture worker, a publisher and a poet in the meantime, and his mutil-backgrounds profound his viewpoints deeply. Through his diverse special status, this thesis interprets Jiao Tong’s performances in diet culture. The research scope of the thesis is Jiao Tong’s diet literature works and the journal “Diet”. It aims to focus on his origin belief in establishing the journal “Diet”as well as the style of the journal and the differences of revisions. In terms of the view of “culture”, the thesis explores Taiwanese diet and the social dimension and cultural awareness in Chinese diet. Taiwan is a multi-ethnic society with its complicated historical backgrounds, forming the diverse cultural content in Taiwanese diet. Jiao Tong concerns much about social groups and political issues as he discusses the coordinaiton of diet. With a link of Jiao Tong’s view of diet and the dimensions of literature, culture,and fashion trends in the journal “Diet”, the thesis aims to find the position of Jaio Tong and the journal “Diet” in Chinese diet culture.
