Abstract:	本研究將結合理論與實驗方法探索高濃度乳液的特性以及開發新型高濃度乳液。過去很多研究已開發出許多類型的高濃度乳液。然而由於熱力學不穩定性、液滴凝聚、和觀察儀器的限制，濃縮乳液的微觀結構、熱力學特性、和流變性能很難透過實驗或模擬來系統性探討。但無論實驗或模擬研究，我們都發展出製造高濃度乳液的新方法。本研究工作的目的是在理論上系統性地了解單分散和多分散高濃度乳液的特性，和在實驗上發展新型高濃度乳液。本計畫之目的除在學術上控制高濃度乳液的穩定性和全面性地瞭解其類固體行為，研究成果對於國內保健食品(食品親水膠體)及生醫(藥物輸送載體)產業的發展具有經濟助益。
