    Abstract: 近年來,地方特色產業已成為台灣各地區產業轉型及提昇經濟之核心。隨著地方特色產業的興起,以及族群意識的抬頭,客家文化逐漸受到重視。而客家飲食是台灣一般社會大眾對客家族群特質最主要認知意象的重要側面,也是舉辦客家文化藝文活動或是營造地區特色時的重頭戲。 隨著中央政府提倡「一鄉鎮一特產」的政策,以其在地性、獨特性、文化性,創造新的觀光旅遊經濟,協助傳統產業的升級與轉型,讓生產活動更有效率,也提升產品的品質。新埔柿餅產業是地方特色產業成功轉型的典範之一,也代表了客家飲食文化與刻苦耐勞的一種體現,基於此,再將產業分析中的鑽石理論與其相結合,試圖以全方位的角度來重新檢視新埔柿餅產業之競爭力為何。 本研究主要是採質化方法中之深度訪談法,針對地方特色產業中的新埔柿餅產業中,規模最大的四家業者為主。本研究結果發現,良好的自然環境與柿餅節的舉辦是新埔柿餅產業成功之關鍵;而業者與政府單位、農會之間關係不夠緊密;業者無提升知識力之意圖,導致無法提升新埔柿餅產業之競爭力。In the recent years, the industries with local characteristics have become transformations of various industries in Taiwan and the focus of enhancing economic condition. With the rising of industries with local characteristics and ethnic consciousness, people start to value the importance of Hakka culture. The general public recognizes Hakka’s food and drink as it is the main characteristics of the Hakka community; it is also an important activity when hosting the Hakka’s culture and art events or representing the local characteristics. With Government’s promotion of One Town on Product and assistance of upgrading and transforming the traditional industries, the local uniqueness and culture have create a new tourism industry which makes the production more efficient and also enhances the product’s quality. Hsinpu’s dried persimmon industry is one of the successful transformed industries with local characteristics and it also represents Hakka’s hard working and their culture of food and drink. Based on this, this study combines the industry with Diamond Theory of industrial analysis and attempts to comprehensively re-examine the competitiveness of Hsinpu’s dried persimmon industry. This study uses the in-depth interview method in materialization approach and is based on the largest four business operators in Hsinpu’s dried persimmon industry. The result of this study shows that good natural environment and the hosting of persimmon festival is the key to Hsinpu’s dried persimmon industry’s success. However, the relation between business operators, Government authorities and farmer’s association is not close enough so that the business operators are not able to enhance their domain know-how and the competitiveness of Hsinpu’s dried persimmon industry.
